Trail Mix Oat Bites

Ingredients
  

  • 1/4 cup organic sunflower seeds (raw or roasted)
  • 1/4 cup organic pumpkin seeds (raw or roasted)
  • 1/4 cup organic raisins
  • 1/4 cup organic dried cranberries
  • 1 cup rolled oats
  • 1 cup organic peanut butter
  • 2-3 tbsp honey or maple syrup
  • 1 tbsp chia seeds
  • 1/4 cup ground flax seeds
  • 1/4 cup mini chocolate chips (any variety)
  • 2 tbsp coconut oil melted

Instructions
 

  • Grab a medium (I used 7-cup) food processor.
  • Add in sunflower seeds, pumpkin seeds, oats, dried fruit, flax and chia seeds, and pulse about 3-4 times.
  • Add in peanut butter, melted coconut oil, and honey and pulse until fully incorporated.
  • Gently mix in chocolate chips.
  • Using a tablespoon or cookie scoop, scoop and firmly press mixture into spoon and release onto baking sheet.
  • Place in refrigerator about half-hour, then transfer to a container and store in fridge for up to a week.
