There are some nights that just scream for a simple one pot dinner like this Cajun sausage and peppers skillet meal. Okay, if you’re like most of us who love to eat and just kinda like cooking (or not at all) most nights are like that tbh.
This Cajun sausage skillet meal is one of our families favorites for several reasons. For me, a.k.a. chef, I like that it is a minimal effort-maximum output type situation.
Use Shortcuts To Make This Skillet Meal Even Simpler
We’re using a couple of shortcuts that make things even simpler. First I grab a bag of my soup starters. Technically this isn’t a soup but these cut frozen veggies totally work in this skillet meal. I also use frozen rice cauliflower to save time and sanity. My family, including three young kids, they will eat any kind of sausage any night of the week. This recipe uses a Cajun sausage which is spicy, but my kids don’t seem to mind a bit. Just make sure you have lots of water at the table. 🙂
Here are the things you need to get started.
- A package of sausage. Since this is a Cajun-inspired dish we are using a Cajun andouille pork sausage. This recipe should also work with a simple Italian sausage.
- You’ll also need two sliced bell peppers, any color. Slice up an onion as well.
- Don’t forget a 10 ounce bag of frozen rice cauliflower.
- We need a bit of tomato paste and a tiny bit of chicken broth.
- Finally if you’re feeling extra adventurous, I’ll add a few things to take the spice level up a notch.
Cajun Sausage and Peppers Skillet Step-By-Step
We’re going to heat a large skillet on medium heat. Drizzle in a little bit of avocado oil or olive oil. Add in your peppers and onions. Get those sizzling for 5 to 6 minutes. Now we’re adding sausage into the mix. You can leave these whole but we like to slice them up into about quarter-inch rounds. My favorite way to do this is to just snip off pieces with kitchen sheers straight into the skillet.
Most sausage comes fully cooked so it should just take 4 to 5 minutes to get nice and brown. Then we’re going to mix in tomato paste and the spices if you’re using them. I highly recommend at least using a pinch of smoked paprika because it adds a whole layer of extra flavor. Next add in about a quarter to a half a cup of broth depending on how saucy you want to get.
Finally we are mixing in the frozen rice to cauliflower. If you want things to move along even more quickly you can speed up this cooking process by zapping the microwave safe bag in the microwave for 2 to 3 minutes before adding into the skillet.
Once the cauli rice is heated through and the ingredients are mixed together well, dinner is ready to serve.
This is also a GREAT meal for meal prep.
