Punxatawney Phil may or may not see his shadow on Groundhog Day. Regardless, we’re likely to start seeing the signs of spring emerging by early March. Daffodils start blooming. Bees begin buzzing around again. Green starts slowly becoming more and more vibrant. The pollen is flying… and sneezes are aplenty. If you’re like our family, you’ll likely also start craving fresher flavors, like these healthy asparagus recipes for spring. We typically start craving fewer comfort foods this time of year.
Seasonal eating adds the benefit of anticipation and excitement over the return of certain ingredients. In spring, asparagus is at the top of our list. It’s plentiful, affordable, nutritious, and delicious. It pairs great with salmon and seafood, and it’s simple to cook.
If you’re new to asparagus, here are some things to know.
Nutrition Benefits of asparagus
It’s fat free, sodium free, cholesterol free, and low-calorie veggie. Asparagus is also a good source of vitamins C and A, and high in folate.
When you’re picking it out, look for stalks with no odor that have dry, tight tips. Try to avoid limp or wilted stalks.
Storage for Asparagus
Asparagus will keep best in the fridge (up to four days). Wrap the ends of the stalks in wet paper towel and storing in a container.
