1 Week Instant Pot Meal Plan (with Grocery List)

If you’re looking for some meal plan inspiration, we’ve got a week’s worth of quick Instant Pot dinners to get you through! The dinners in this Instant Pot meal plan are healthy and use fresh, seasonal ingredients. This menu is perfect for peak farmer’s market season, when fresh corn on the cob, peppers, and green beans are fully stocked! Free free to sub fresh ingredients for ones on the grocery list (aka canned green beans) where you see fit.

We didn’t put prices on the grocery list, but as a point of reference, our grocery budget for a family of five is about $100/week. Besides farmer’s markets, we typically shop mostly at Aldi. We also do one or Walmart grocery pickup orders and maybe one Kroger per month. Most of our dinners should cost you $10 or less with mostly organic ingredients.

Most of us have the basic 6 quart Instant Pot models. Alissa has an 8-quart, so if you have a specific question about the bigger model, I’m sure she can help you!

This is one of our family’s favorites! They never complain about barbecue chicken.

This shrimp is a little sweet, a little spicy, and a lot of yummy flavor!

Chili

I love making this chili! When the weather just hints at fall-ish, This gets put on near weekly rotation in our house. We also use leftovers for sheet pan nachos or chili cheese hot dogs or baked potatoes. It makes a lot!

Stir Fry (Raia’s Recipes)

I love that this whole recipe cooks together in the Instant Pot. You could totally change out ingredients seasonally or add bits and pieces of things that need used up in the fridge!

Instant Pot Chicken and Broccoli (The Brooklyn Mom)

While our family loves takeout, it’s just not in the budget to do weekly. Fun “fakeout” takeout meals like this chicken and broccoli are a great replacement!

Vegan Instant Pot Corn Chowder (Zardy Plants)

Yum! This recipe is a great transitional recipe from summer to fall. This recipe is written vegan, but if you want to add a little extra protein, crumbed bacon would be great on this! (Or try our cheesy zucchini cornbread muffins. They’d be great with the chili too!)

Egg Roll in a Bowl

Depending on the mood, we alternate between regular rice and riced cauliflower for this one. Feel free to use either, but I put riced cauliflower on the shopping list!
